G'DAY FARM ~~~~~~~~~~~~~~~~ GDAYFARM.COM.AU/RECIPES ------ Leek & Sorrel Frittata Serves 4-6 ~~~ Ingredients ~~~ 1 tbs butter or olive oil 4-6 baby leeks, sliced 1 cup Sorrel - French, finely shredded 8 eggs - free range 60ml milk (preferably raw cow's milk) 1 cup grated Gruyere or cheddar cheese salt and pepper to taste ~~~ Directions ~~~ Preheat oven to 180C In a medium cast iron skillet and over a medium heat, melt the butter (or oil if using) and saute the leeks. Add the sorrel and cook until wilted. Season with salt and pepper. Combine the eggs and milk in a large bowl and whisk together. Add to the skillet and cook until the eggs begin to set. Top with cheese and place in the oven. Bake until set and lightly browned on top. Allow to cool for a few minutes before removing from the skillet. Cut and serve with a fresh mesclun mix salad.
