G'DAY FARM ~~~~~~~~~~~~~~~~ GDAYFARM.COM.AU/RECIPES ------ Stetson Salad Serves 4-6 ~~~ Ingredients ~~~ 2 cups cooked quinoa 1 cup chopped smoked salmon 1 cup roasted corn kernels 1/2 cup finely grated pecorino or parmesan cheese 1/2 cup pepitas (pumpkin seeds) 1/2 cup currants 1 cup chopped tomatoes - heirloom mix 1 cup finely shredded arugula (rocket), spinach - baby or kale - baby 1 cup chopped avocado DRESSING 1/4 cup olive oil 1/2 cup buttermilk 3 cloves garlic - Russian 1/2 tsp salt handful fresh basil - genovese 1 tbls sunflower seeds or pine nuts or walnuts 1/2 small onions - red, chopped 1/4 tsp ground black pepper 1 tbls lemons juice ~~~ Directions ~~~ Combine the cheese, pepitas and currants in a bowl. On a large serving plate arrange the quinoa, smoked salmon, corn kernels, avocado, tomatoes, rocket/spinach/kale and combined cheese, pepitas and currants in strips. In a blender place all the dressing ingredients and pulse to achieve a nice consistency. Place in a pouring jug. Place the salad plate and jug on the centre of the table. When ready to eat drizzle the salad dressing over the salad and mix with salad spoons. Serve on individual plates. NB: We like to add half the dressing and mix and taste then serve, each person can then add more dressing to their individual taste.
